Hamming it up over the holidays

Once you’ve had your fill of turkey this Thanksgiving, you might be looking for some great holiday recipes with a little different taste. Goodnight¬†Brothers Country Ham has rolled out an all-natural line of ham products and offers some great recipe ideas for both entertaining family on the home front and for tailgating before the big game. Being from North Carolina, we are a little biased, but this company based out of Boone, N.C. has been dry curing hams since 1948 and is well-known throughout the Southeast.

I, for one, love making ham and cheese rolls for any holiday brunch and this recipe is the perfect solution:

Sugar Cured Ham Delights


  • 3/4 cup butter softenedhamdelights
  • 1&1/2 tbsp dijon mustard
  • 1&1/2 tbsp yellow mustard
  • 1&1/2 tbsp Worcestershire sauce
  • 1&1/2 tbsp poppy seeds
  • 1 finely chopped onion
  • 1 package of Goodnight Brother’s Sugar Cured Ham
  • 1 package of party rolls
  • 1/2 pound swiss cheese


Mix ingredients to form a spread

Brown the Sugar Cured Ham in a skillet

Split package of party rolls in half

Spread mixture on both sides of rolls

Add layer of swiss cheese to each side of roll

Add Sugar Cured Ham

Brush a little of mixture on top of roll

Bake at 350 until cheese is melted and roll is toasted

For a variation on this theme, that packs just a bit more Southern punch, how about these:

Country Ham Bacon Pimento Tea Biscuits


  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded velvetta cheese
  • 1/2 pound bacon cooked and chopped into small pieces
  • 1 small jar of pimentos
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper
  • 1/2 cup of Mayonaise
  • 1 package of Goodnight Brothers Country Ham
  • 1 package tea buscuits
  • Strawberry jam optional


Mix ingredients together until smooth

Brown Country Ham in a skillet

Bake tea biscuits on 350 degrees until brown (about 20-25 minutes)

When done, split the biscuits and spread strawberry jam on bottom half, add a dollop of pimento cheese mixture and add 2 bite-size pieces of country ham
