The Backyard Bistro in Raleigh, North Carolina has been getting a lot of buzz recently due to their mouth watering, Redneck Rolls. Hickory smoked pulled pork combined with their famous “red neck sauce” just seemed like a match made in tailgating heaven. I sat down with Red Neck Rolls creator Joe Lumbrazo who told me the story behind this new sensation.
SU: How did you come up with your concoction?
JL: The idea came from one late night while eating an egg roll from my favorite Chinese restaurant I thought how can we incorporate these wonderfully little packaged egg rolls into our establishment? And that’s when the pork and collards idea came from. Our smoked pork would substitute the ground pork, and our collards would be a substitute for the cabbage that is found in traditional egg rolls.
SU: How do you make your redneck rolls?
JL: We use 12 hour hickory smoked pork butts that have been pulled, and fresh collard greens that are cooked with ham hocks and onion for at least 4 hours. We also use our Backyard Bistro Rub
SU: How did you come up with the name?
JL: We have a famous sauce called “Red Neck Sauce” we pair this sauce with the Egg Rolls. So the name just seemed fitting, “Red Neck Egg Rolls” I think it’s perfect!
SU: This food is synonymous with the tailgating community. What is your favorite form of tailgating?
JL: My favorite form of tailgating is: the weather needs to be about 65, it needs to be sunny. You need to be surrounded by friends and family. you need to have all of your favorite foods: pork bbq ,chicken wings, Basilio Sausage, some spicy chili with skillet corn bread, Italian grinder with lots of banana peppers, classic lays chips, homemade salsa and cold beer.
