Preheat the oven to 350 degrees F. Spray a large muffin tin with cooking spray or grease with butter. Crack an egg into each well, and whisk with a fork. Sprinkle with a pinch of salt/pepper.
Bake them for 15-20 minutes until fully set, then remove from the oven and let cool.
To assemble, layer the meat, egg, cheese on a toasted english muffin or bagel. Wrap individually in tin foil and refrigerate for up to 3 days or freeze for up to 3 months.
To reheat, take out of foil and heat in the microwave for 30 seconds, flip, and repeat until the desired temp is achieved. You can also leave them in foil and place them on a grill.
