Ingredients
12slicesthick sliced bread (about 1/2 inch thick)
6large eggs
1/2cupplus 1 tbsp half and half
1tbspvanilla extract
1/2cupgranulated sugar, divided
1 1/2tspcinnamon, divided
1/2cupall purpose flour
1/4cupunsalted butter, melted
3cupspanko breadcrumbs
maple syrup for serving
Instructions
Preheat the oven to 400 degrees F. Cut each slice of bread into 3 strips.
In a large flat bottom bowl, whisk together the eggs, half-and-half, and vanilla extract. Pour in 1/4 cup of sugar, 1/2 tsp cinnamon, and all of the flour. Whisk well, and add the melted butter. Whisk again until well combined.
In a separate bowl, mix together the panko bread crumbs, remaining sugar and the remaining cinnamon.
Place a parchment paper lined baking sheet next to the bowls. Dip each bread strip into the egg mixture, making sure to fully coat before dredging in the panko mixture and finally placing on the baking sheet.
Bake 8-10 minutes, until golden brown.
To freeze, wrap in tin foil and place in a ziplock bag. Freeze for up to 3 months and thaw by placing in the refrigerator overnight.
