The hockey season is getting intense as the playoffs get close to the finish line. Not to mention that the weather is excellent for tailgating, something that you could not say earlier in the season.
Here are a few hockey-centric food recipes to make for pre-game activities.
Tim Horton’s Coffee Wings
Ingredients:
- 1 Small Cup of Tim Horton’s Hot Coffee, Black
- 3/4 Cup Honey
- 1/4 Cup Sriracha
- 2 TBSP Rice Wine Vinegar
Directions:
- Combine all ingredients in a small sauce pan and cook over medium high heat until the sauce is thick and syrupy, this should take about 40 minutes.
Garlic Beer Chicken
Ingredients:
- 1 12 ounce bottle dark ale beer
- ¼ cup extra virgin olive oil
- 6 large cloves of garlic, smashed
- ¼ cup lemon juice
- 3 tablespoons fresh lemon basil (or 3 teaspoons dried)
- 1 tablespoons fresh oregano (or 2 teaspoons dried)
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 4-5 lbs boneless skinless chicken breasts, trimmed and washed
Directions:
- Combine olive oil, garlic, lemon juice, basil, oregano, thyme, salt and pepper in a food processor. Blend until your mixture is smooth.
- Pour mixture over chicken. Pour 1 cup beer in over chicken.
- Preheat grill to medium-high.
- Grill chicken until the top side start to turn opaque (instead of pink), this will take about 6-8 minutes.
Turkey Chili
Ingredients:
- 3 tablespoons virgin coconut oil or palm oil (or extra-virgin olive oil if you have neither)
- 1 medium yellow onion, chopped
- 5 cloves garlic, chopped
- 1 ½ teaspoon Celtic sea salt
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 2 tablespoons tomato paste
- 1 chipotle chile in adobo, coarsely chopped, with 1 teaspoon sauce
- 2 cups leftover turkey, pulled apart and cut into bite-size pieces
- 1 12-ounce bottle dark beer
- 4 cups crushed or coarsely chopped tomatoes, with their juice
- 2 cups kidney beans
- 2 cups black beans
- 2 cups frozen corn kernels
- ¼ cup flaxseed meal
Directions:
- Heat the oil in a large, heavy skillet over medium-high heat. Add the onion, garlic, salt, chili powder and oregano and cook, stirring until fragrant, about 3 minutes. Stir in the tomato paste and the chipotle chile and sauce; cook about 1 minute more.
- Add the turkey and beer and simmer until reduced by about half, about 8 minutes. Add the tomatoes and the beans and corn; bring to a boil. Add flax.
- Let simmer, stirring occasionally, until thick, 30 minutes.
