Island Old Fashioned
by Joseph Schwartz of Silver Lining
- 2 oz “Santa Teresa 1796” Rum
- 1 dash of Cane Syrup
- 1 dash of Velvet Falernum
- 1 dash of Angostura Bitters
Glass: Old Fashioned
Garnish: orange and lemon twists.
Build in a whiskey glass with ice.
Rum Berry
- 2.25 oz Flor de Caña 7 Year Grand Reserve
- 1 oz fresh lemon juice
- 1.25 oz simple syrup
- 1.5 oz diced long cucumber
- 1 large strawberry
Glass: Old Fashioned
Garnish: Strawberry
Muddle cucumber and strawberry in cocktail shaker until the strawberry is pulverized. Add remaining ingredients and shake vigorously with ice. Strain over fresh ice into old fashioned glass. Prop slice of fresh strawberry onto rim of glass.
Sailor Jerry’s Rum Daisy
1 wine glass full of Sailor Jerry Rum
juice of a 1/2 lemon
4 dashes gum syrup
3 dashes orange cordial
seltzer water
Shake Rum, lemon juice, gum syrup, orange cordial. Strain into ice-filled glass. Then fill with seltzer water.
Pistachio-Rum Milk Punch
- 1 ½ ounces Captain Morgan White Rum
- 1 ounce heavy cream
- 1 ounce whole milk
- 2 ounces pistachio-agave syrup
- real vanilla extract to taste
- 3 dashes Fee Brothers Cardamom Bitters
- 1/2 teaspoon shelled and chopped pistachios
- Hershey’s chocolate shavings
- Crushed Pringles
Rim a collins glass with lemon juice and then dunk in crushed pringles. Fill glass with ice. Shake rum, cream, milk and syrup with ice vigorously until frothy. Strain into glass and top with the pistachios and chocolate shavings.
Pistachio-Agave Syrup:
- 1 cup shelled pistachios
- 1 cup agave syrup (1 part water to 1 part agave nectar)
Blend pistachios and simple syrup until smooth. Fine strain the liquid and then store in a clean glass container.
BLACK & GINGER TEA

- 3 oz. Ginger Tisane (tea base)
- 1 oz. Captain Morgan Black Spiced Rum
- 1 Tablespoon agave nectar (or sweetener of choice)
- 1/4 oz. lemon juice
Glass: Collins
