It is tax day. No one likes tax day. So I have an interesting idea. Let’s tailgate at the Post Office.
Yeah, I’m sure it is totally legal and no one will mind. (Please note that if you do this and are in trouble with the law we are not responsible) . Yep….totally fine.
First, it might be a good idea to find the perfect location for your tailgate. A small, rural post office with limited hours is not the best choice. Even a suburban location may close at 6pm. Who wants to end the party at 6pm.
If you remember watching local news on past April the 15ths you will certainly find that one city post office that is open all the way until midnight. Yeah you remember those news reports.
Cars rolling up to the drive by area, filled with sad looking drivers begrudgingly handing over their hastily filled out tax returns to smiling post office workers with vests and large bins to accept those envelopes to the IRS.
That would be the location.
Second, get all your equipment together. You might need to take the giant flag that supports your local college team and cover it with something else temporarily. An American flag would work well. Just note that you could be confused with some kind of political loon that is protesting paying taxes.
But look at yourself, you are tailgating in the parking lot an urban post office. You might not want to be concerned too much with how things look.
And third, we need food. Here are some recipes that seem to work well:
Tax Crabcakes
INGREDIENTS
1 pound backfin crab meat
8 saltine crackers
1 egg beaten
2 tbsp mayonnaise
1 tsp mustard
1/4 tsp Worcestershire
1/2 tsp Old Bay seasoning
salt to taste
2 tbsp vegetable oil
PREPARATION
Put meat in a bowl and set it aside.
Crush the saltine crackers very fine and mix with all the other ingredients.
Gently fold in the crab. Only mix enough to combine ingredients.
Shape into 6 crab cakes, and refrigerate for at least 1 hour.
Heat about 2 tablespoons of vegetable oil in a non-stick frying pan.
Sauté until golden brown on each side.
This will only take about 3-5 minutes per side.
Garnish with tartar sauce, remoulade, or simply with a squeeze of lemon.
Money Dogs
INGREDIENTS
Hot Dogs. Get some good ones.
PREPARATION
WRAP 1 bacon slice tightly around each wiener, tucking in ends of bacon slices to secure.
Grill 8 to 10 min. or until bacon is done and wieners are heated through, turning occasionally. Drain on paper towels.
Meanwhile, brush mayo evenly onto both sides of buns, then grill 1 to 2 min. on each side or until lightly toasted on both sides.
All The Money In The World Burgers
INGREDIENTS
4 Kobe Beef Patties
Salt and pepper to taste
4 Hamburger Buns
4 Cheddar cheese slices
lettuce
tomato
Sliced onion
Dill Pickle slices
Mayonnaise
Mustard
Ketchup
PREPARATION
Season both sides of the patty with salt and pepper.
Place the patties on a hot grill or grill pan.
Allow to cook on one side until nicely seared.
Flip the patty over and cook the other side.
Lay a slice of cheese on top.
Remove the patty from the heat when the cheese melts.
