Daytona Speedway Firecracker Hotdog
Ingredients
- 2 tbsp extra virgin olive oil
- 8 grilled hotdogs
- 8 toasted hotdog buns
Spicy Jalapeno Coleslaw
- 1/3 cup mayonnaise
- 1/4 cup thinly sliced red onion
- 2 tbsp apple cider vinegar
- 1 jalapeno, seeds and stem removed and thinly sliced
- 2 tbsp extra virgin olive oil
- 1/4 tsp table salt
- 1/4 tsp pepper
- 16 oz coleslaw
Pickled Pepper Relish
- 6 dill pickle spears
- 1/2 cup roasted red bell peppers
- 1/4 cup banana pepper rings
Instructions
Spicy Jalapeno Coleslaw
- Combine all of the ingredients in a large bowl, toss to coat. Place in an airtight container in the refrigerator and let it chill for at least 1 hour prior to serving.
Pickled Pepper Relish
- Add all of the ingredients to the bowl of a food processor. Pulse until finely diced.
- Place hotdogs in a toasted bun, then top with the jalapeno coleslaw and then the pickled red pepper relish. Enjoy!
