Grilled Mini Pizzas
Ingredients
- 1 ball Refrigerated pizza dough can be homemade
- 8 oz fresh mozzarella cheese, cut into 1/2 inch thick medallions
- fresh basil
- salt, to taste
- pepper, to taste
- 1 tbsp extra virgin olive oil
- 1/2 cup marinara sauce
- 2 large tomatoes
Instructions
- Preheat grill to medium heat. Roll out the pizza dough on a flat surface.
- Cut the dough into small circles with small bowl to make mini pizzas. Roll leftover dough pieces together, flatten and repeat by cutting into small circular cutouts.
- Brush both sides of dough with olive oil. Spray grill with non-stick spray.
- Grill dough about 5 minutes, or until grate marks appear. Flip the dough, then, with recently grilled side up. Spread the marinara sauce evenly over the pizza, then add a piece of basil, tomato slices and lastly, the mozzarella cheese.
- Grill for 5 minutes or until cheese has melted. This recipe can also include meat such as pepperoni or cappicola.
