- 4 Cups Pineapple Juice, chilled fresh is best
- 1/2 Cup White Rum or Coconut Rum Malibu works great
- 750 ml Prosecco, chilled
- 2 Cups Frozen Pineapple Chunks
- mint leaves for garnish
