For morning games, why not bust out a classic. They’re not from Roscoe’s but these bites will be famous at your tailgate. Serve mini chicken and waffles with our signature honey butter, or toss on some bacon for an extra crunchy salty flavor. They are perfect for any celebration or brunch, and they are always a huge hit with kids! To save on time, we use store bought waffles and make the fried chicken from scratch.
Mini Fried Chicken and Waffles
Ingredients
- 2 large boneless chicken breasts cut into 1 1/2 inch cubes
- 2 cups butter milk If you don't have buttermilk you can add 2 tbsp of lemon juice or white vinegar into the 2 cups of milk and let it sit for 10 minutes
- 1 cup all purpose flour
- 1/4 cup cornstarch
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp table salt
- 1/4 tsp pepper
- 2 cups vegetable oil
- 30 mini frozen waffles
Honey Butter
- 1/4 cup unsalted butter, softened to room temp
- 1 1/2 tbsp honey
- 1/8 tsp table salt
Instructions
- Place the cubed chicken into a bowl and cover with buttermilk. Cover and refrigerate for 6 hours or overnight. You can leave the butter out as well to soften to room temperature.
- When you are ready to cook the chicken, preheat the oven to 375 degrees F
- In a medium bowl whisk together the room temperature butter, honey, and 1/8 tsp salt.
- In another bowl, combine the flour, cornstarch, garlic powder, onion powder, 1 tsp salt, and 1/4 tsp pepper.
- Pour the vegetable oil into a large dutch oven and turn the heat to medium-high.
- Remove a piece of chicken from the buttermilk, allow the excess mixture to drip off, and coat it in the flour mixture. Add it to the heated oil with a few more pieces of coated chicken, being careful not to overcrowd.
- Fry on all sides until golden, about 3-5 minutes per side, and transfer to a plate. You want to make sure the chicken is heated to 165 degrees F in the middle. Repeat the process with the remaining chicken.
- While the chicken is frying, arrange the waffles on a baking sheet and bake until toasted and heated through, about 8-12 minutes.
- To assemble, place a mini waffle down on a plate and top with a piece of fried chicken. Drizzle honey butter over the top and secure with a toothpick. You can also add another waffle to the top, if you choose. Serve immediately and enjoy!
