Tackle Your Entrée First
When it comes to tailgate party food, the best idea is to have lots of snacks, sides, and desserts that are easy to prepare. Then have a show-stopping entree that people will love. Grilled steaks, a delicious rack of BBQ ribs, or even slow-cooked pulled pork are great because they’ll feed a large crowd and impress your guests. However, if you are looking for something really unusual, might we suggest Sutbb’s Jalapeno Pepper BBQ Bacon Cheeseburger Meat Log?
Ingredients
- 3 Lbs Ground Pork Sausage
- 1 Package Cream Cheese
- 1 Cup Shredded Cheddar Cheese
- 1 Package American Cheese Slices
- 3 Packages Bacon
- 1 Onion, diced
- 2 Jalapenos, diced
- 1 Cup Stubb's Original Bar-B-Q-Sauce
Instructions
- Dice one package of bacon and add to a medium-sized sauté pan over medium heat. Sauté bacon for 2-3 minutes, or until fully cooked. Remove bacon pieces from the pan, but keep fat.
- Add jalapeño and onion to the bacon fat. Season with salt & pepper and sauté until softened. Once fully cooked, remove to a large bowl. Add cream cheese and shredded cheese, and stir until combined. Place a layer of plastic wrap on a cutting board, spoon mixture onto the plastic wrap, and form into a log. Roll the log in plastic wrap and place in the fridge to cool.
- To start rolling the first layer of sausage, place another layer of plastic wrap on your cutting board. Spread about one third of your ground pork sausage into an even layer on the plastic wrap. Pull the cheese and sautéed mixture log filling out of the fridge and unwrap.
- Place the filling in the center of the sausage layer. Using the plastic wrap for support, pull one end of the sausage up and over the filling. Continue to roll the sausage around the filling until it is completely covered and press the seams together to create a seamless sausage barrier around the filling. Roll the log in plastic wrap and set aside.
- Start creating your second roll by placing another layer of plastic wrap on your cutting board. Spread the rest of your sausage into an even layer on the plastic wrap. Spoon a layer of Stubb’s Original Bar-B-Q Sauce all over the sausage. Sprinkle crispy bacon on top of the sauce, and then cover everything in a layer of American cheese.
- Unwrap the previous sausage log and place it in the center of this new sausage/bacon/cheese roll. Using the same technique as last time, roll it up so the bottom layer completely engulfs the existing log. Press the seams to close up any gaps and wrap the whole thing in plastic and set aside.
- Place another layer of plastic wrap on your cutting board, because it’s time to start building your bacon weave! First, lay down a layer of bacon strips side by side. Fold every other piece of bacon in half so they are half as long. Place an additional piece of bacon at the very edge of each of the folded pieces, perpendicular to the existing slices. Unfold the currently folded pieces over the perpendicular slice. Next, fold all of the bacon slices that weren’t folded previously. Repeat process.
- Once you’ve completed your bacon weave, unwrap the sausage log and set it in the center. Roll the weave around the sausage starting from one end and rolling toward the other so you end up with the bacon seam side down. Tuck in any loose bacon ends to create an impenetrable bacon shield and your log is ready for the grill.
- Set up your grill for indirect heat. Bring the temperature up to ~300 degrees. When you’re ready to cook, throw on some wood chips. Place the log in the indirect heat zone of your grill and close the lid. Use your vents to maintain a temperature of 300 degrees. Cook the meat on the grill for one hour, and then check the temperature of the internal layer of sausage every 15 minutes until you reach 150 degrees.
- Brush on a thick layer of Stubb’s Original Bar-B-Q Sauce. Let the log cook for another 15-20 minutes to bring the internal temp to 165 and set a beautiful glaze of Stubb’s on the outside. Watch carefully so the sauce doesn’t burn or char.
- When the sausage is fully cooked and the Stubb’s Bar-B-Q glaze is thick and sticky, it’s time to pull your log off the grill. Set the fatty on a cutting board and let rest for 15 minutes. Then, slice the fatty as thick as you like and serve with Stubb’s Original Bar-B-Q sauce on the side.

BILLS-INSPIRED GRILLED BUFFALO WINGS
Ingredients
For The Wings
- 3 Lbs Chicken Wings (without tips)
- 1 1/2 Tsp Salt
- 1/2 Tsp Black Pepper
- Vegetable Oil, for grill
For The Sauce
- 6 Tbsp Unsalted Butter
- 1 Clove Garlic, minced
- 1/4 Cup Plus 2 Tbsp Frank's Red Hot Original Cayenne Pepper Sauce
- 1/4 Tsp Salt
- 1/2 Tsp Onion Powder
- 1/2 Tsp Chili Powder
- 3/4 Tsp Sugar
Instructions
- Heat the grill to medium-high. Season the wings with salt and pepper.
- Using grill tongs, dip a wad of paper towels in oil, then carefully rub the grill grate until glossy and coated. Grill the wings, covered, flipping occasionally, until they are golden brown, crispy and completely cooked through, about 20 minutes. Keep a close eye on the grill: if there are flare-ups or the wings begin to burn, move the wings to a cooler part of the grill or reduce the heat. You don't want grill marks on the wings; just a nice and even golden-brown color.
- While the wings are cooking, make the sauce. Combine the butter and garlic in a microwave-safe bowl. Cook for about one minute in the microwave until the butter is melted. Stir in the hot sauce, salt, onion powder, chili powder and sugar. Set aside.
- Dip the cooked wings in the sauce and serve immediately. Alternatively, serve the wings plain with the sauce on the side.

BEER-BARBECUED WINGS FROM “BARBECUE! BIBLE”
Is it just us but does everything taste better with beer? Combining the classic hits of beer-battered wings with barbecue wings, this recipe knocks it out of the park. The best part? They come from one of our favorite chefs known for making killer tailgating food.These wings are inspired by the flavors of Australian BBQ. The wings are marinated, then the homemade sauce is brushed on and grilled until thick, tasty, and sticky. These are finger-licking good!

- 12 Whole Chicken Wings
- 1/4 Cup Peanut Oil
- 1/4 Cup Fresh Lemon Juice

- 1 Tsp Ground Black Pepper
Ingredients For The Barbecue Sauce:
- 2 Tbs Peanut Oil
- 1 Small Onion
- 1 Clove Garlic, minced
- 2 Tsp Minced Peeled Fresh Ginger
- 1/2 Tsp Hot Red Pepper Flakes
- 1 Cup Ketchup
- 1/3 Cup Australian Beer (Foster's)
- 2 Tbsp Fresh Lemon Juice
- 2 Tbsp Worcestershire Sauce
- 2 Tbsp Red Wine Vinegar
- 1 Tbsp Dark Brown Sugar
- 1 Tbsp Honey
- 2 Tsp Soy Sauce
- 1 Tsp Dry Mustard
- 1/2 Tsp Fresh Ground Black Pepper
Instructions
- Rinse the wings under cold running water, then drain and blot dry with paper towels. Make two or three deep slashes, to the bone, in the meaty part of each wing. Place the wings in a large nonreactive bowl and stir in the 1/4 cup of peanut oil, 1⁄4 cup of lemon juice, 1/4 cup of Worcestershire sauce, 1⁄4 cup of beer, the salt, and the 1 teaspoon of pepper.
- Heat the 2 tablespoons of peanut oil in a medium-size heavy saucepan over medium heat. Add the onion, garlic, ginger, and hot pepper flakes and cook, stirring with a wooden spoon, until the onion and garlic are lightly browned, about 5 minutes. Stir in the ketchup, 1⁄3 cup of beer, 2 tablespoons of lemon juice, 2 tablespoons of Worcestershire sauce, 2 tablespoons of vinegar, brown sugar, honey, soy sauce, mustard, and 1⁄2 teaspoon of pepper and bring to a boil. Reduce the heat to low and let the sauce simmer gently until thick and richly flavored, 10 to 15 minutes, stirring occasionally. Remove the barbecue sauce from the heat. Measure about 1 cup and set this aside for serving.
- Preheat to medium-high
- Brush and oil the grill grate. Drain the wings and arrange them on the hot grate, pulling them open to expose as much skin as possible to the flames. Grill the wings, turning them several times with tongs, until the thicker wing sections are no longer pink near the bone, 12 to 16 minutes in all. Reduce the heat if the wings start to burn. Start brushing the wings with the barbecue sauce during the last 5 minutes of cooking.
- Transfer the wings to a serving platter. Brush them again with the sauce, and serve with the reserved sauce.

BEER BATTERED WINGS
As we said before, we think everything tastes better with beer. Inspired by the favorite food of Broncos fans, these beer battered wings are crunchy, tasty, and super easy to make. Beer battered wings are a really great option for tailgating. They are perfect if your tailgating team has a variety of tastes. You can serve them with different dipping sauces so everyone can get the flavor they love on their wings. These wings are great on their own too. These are also probably the best fried wings to make tailgating. They don’t require much prep and don’t require a deep fryer.
Ingredients
- 8-10 Wings, split and washed
- 355 Ml Beer (medium thickness)
- 1 Cup Flour
- 1 Egg
- Salt
- Pepper
Instructions
- Coat wings with light dusting of flour to allow the batter to cling to it.
- Add flour, salt, pepper and egg in a bowl.
- Mix with whisk, and slowly add beer until batter is thick like pancake batter.
- One by one, dip wing into batter, then carefully drop into oil.
- Deep fry for 10 minutes.
- Remove from oil and dry wings with paper towel.
- Serve immediately with hot sauce.

STICKY CHILI CHICKEN WINGS
Chicken wings are a tailgating and barbecuing staple. They’re good for any season, any sport, any time. Now you can make them ahead of time and save yourself the game-day trouble with this recipe from our friends at Wonderbag. Ingredients
- 30 Ml Oil
- 1 Large Onion, sliced
- 1 Red Bell Pepper, sliced
- 1 Green Bell Pepper, sliced
- 3 Chili's, chopped
- 3 Clove Garlic, chopped
- 24 Chicken Wings, tips cut off
- 1 400g Tin Tomato Puree
- 150 Ml Sweet Chili Sauce
- 15 Ml Salt
- 10 Ml Pepper
- 30 Ml Sugar
- 90 Ml Chopped Coriander
Instructions
- In a medium-sized pot, heat the oil and brown the chicken wings.
- Remove and set aside.
- In the same pot, brown the onion and garlic and fry the pepper.
- Add all the remaining ingredients and chicken wings and bring to the boil
- Turn down the heat, place the lid on the pot and simmer for 15 minutes
- Place in the Wonderbag on a mat or cloth, seal, and leave to cook for 3 hours
- Open and brown under the grill if desired
- Serve with basmati rice or fresh crusty bread
These sticky chili chicken wings are both sweet and spicy. We love prepping these ahead of time and grilling them right at the game. They are really convenient and everyone loves them. Our favorite part about these wings is how the sauce thickens. They are definitely sticky but they are not messy.
PANTHER CHILI LOBSTER CHICKEN WINGS
Now we know what you’re thinking, lobster on chicken wings? It sounds unusual but it is incredibly delicious.
Ingredients
- 2 Quart Lobster Stock
- 1 Bottle Sriracha
- 1 Pint Soy Sauce
- 1 Cup Lime Juice
- 1/2 Cup Franks Red Hot
- 2 Sticks Butter
Instructions
- Add lobster stock, sriracha, soy, lime juice and red hot to a stainless steel pot. Bring to a boil
- Emulsify butter into the sauce with an immersion blender
- Thicken with rice flour, then transfer to a bain marie and ice to <40°
- Store in quart containers with name/date labels
- Store for up to 4 days under refrigeration
- Toss fried wings in a bowl with 1 oz. of chili lobster wing sauce
- Season with chili lime salt
- Garnish with scallion
Notes
The recipe uses lobster stock which is light, slightly sweet, and briney. This makes for a perfect wash for chicken wings. Made with both Sriacha and Frank’s hot sauce, these wings are spicy and a little sweet. They were originally designed to celebrate the Carolina Panthers, but you don’t have to be a Panthers fan to enjoy them. These wings will be hit at any tailgate.
WICKED CHIMICHURRI WINGS
Wings are always a hit at tailgates. And who does not like spicy?
Ingredients
- 1/2 Cup Stubb's Original Wing Sauce
- 1/4 Cup Olive Oil
- 2 Tbsp Soy Sauce
- 4 Tsp Red Wine Vinegar
- 1 Cup Tightly Packed Fresh Parsley
- 4 Cloves Garlic
- 2 Tsp Dried Oregano
- 3-4 Lbs Chicken Wings
Instructions
- Combine Stubb’s Original Wing Sauce, olive oil, soy sauce, vinegar, parsley, garlic and oregano in the bowl of a food processor.
- Pulse until pureed and the mixture forms a thick sauce.
- Fold and tuck the wing tips back behind the drummette, creative a triangle.
- Marinate the chicken for at least 2 hours, or up to overnight, refrigerated.
- Prepare a grill for direct cooking. For a charcoal grill, when the coals are ashed over, rake or spread them out in the bottom of the grill so the food can cook directly over the coals. (For a gas grill, fire up the burners so the food can cook directly over the heat.)
- Grill the wings over direct medium heat, until the wings are brown on the outside and the meat it opaque, about 20 minutes total cooking time, flipping them over once or twice during cooking.
- Serve warm or at room temperature.
These spicy grilled wings are seasoned with chimichurri sauce. Chimichurri sauce is a traditional Argentinian sauce that is made with fresh herbs, garlic, olive oil, and vinegar. It’s the perfect accompaniment to meat and tastes incredible on chicken wings. These wicked chimichurri wings are also incredibly easy to make and can be prepared ahead of time. You simply whip up the chimichurri sauce and marinate the meat for at least two hours. Then pack them up and take them to the tailgate to be thrown right on the grill.

- 2 lbs chicken wings cut into 2 pieces with tips removed
- Chicken broth
- DRY seasoning salt, pepper, garlic powder, onion powder, etc.
Instructions
- Preheat oven to 450 degrees
- Bring a large pot of half water half chicken broth to boiling.
- Boil the wings 8-10 minutes and remove to drain on a wire rack. (helps reduce some of the fat allowing for quicker crisping in the oven)
- Season the wings with your favorite DRY seasoning
- Bake wings on a sheet pan for 30 minutes, then turn wings over and cook the other side for another 10 minutes.
- Remove to a large bowl and toss in your favorite sauce. (see separate recipes )
- Serve while hot.

- 1/4 c Fish Sauce
- 1/4 c Mirin

- 1/4 cup fish sauce
- 1/4 cup superfine sugar
- 8 cloves garlic 5 crushed and 3 minced
- 2 tbsps vegetable oil plus more for frying
- 1/3 cup cornstarch
- 1 tbsp chopped cilantro
- 1 tbsp chopped mint
Instructions
- Heat saucepan over medium.
- Sprinkle in a layer of sugar, let melt, then add another layer (no stirring necessary).
- Repeat until all sugar is melted into a syrup.
- Cook the syrup until it turns a deep amber in color and smells nutty (2–3 minutes).
- Remove from heat and add to bowl.
- Slowly stir in garlic and fish sauce until smooth.
- Add wings and toss until well coated.

- Make twice as many as you think you’ll need so you don’t run out before kick-off.
